It was a big year for food lovers on TikTok! From pastas to tortillas to breakfasts, these were the biggest food trends of 2021. Try them as is or with your own creative spin.
Baked Feta Pasta
In this viral TikTok, 2 pints of cherry tomatoes, 1 shallot, 1/2 cup of olive oil, salt and herbs are baked at 400°F with a block of feta for 40 minutes. Pasta is cooked in a separate pot and added to the finished bake with ½ cup of reserved pasta water. Simple and delicious!
Make it TikTok Tikka Masala! After the initial step of roasting the tomatoes and feta, add ½ a chopped red onion, ½ a green pepper, ½ a red pepper, 1 tbsp ginger garlic paste, ½ tsp garam masala, 1 tbsp Kasuri Methi (fenugreek leaves) and 2 tsp honey. Pasta is cooked (reserving a cup of pasta water). Cooked pasta is added to the dish with the reserved pasta water and you have a new take on baked feta pasta.
At-home Quesadilla or Tortilla Hack
This delicious trend is famous for its simplicity and versatility. Simply slice a tortilla halfway through, add different fillings to each of the four quadrants, fold it up and fry it in a pan. The flavour combinations for this hack are endless: brie cheese with mango chilli sauce; peppers, corn, cheese and garlic with garam masala and coriander; and peanut butter with strawberry jam.
Corn is cut into quarters (lengthwise) and brushed with 2 tbsp of olive oil, ½ tsp each of garlic, paprika, salt and black pepper. Put in your airfryer for 10 minutes at 200°C, brush with 1 tbsp of melted butter, sprinkle with parsley and enjoy.
Who wouldn’t want cake for breakfast? Preheat your oven to 350°F and grease a ramekin or small dish with butter. Combine a ½ cup of rolled oats, a ripe banana, 1 egg, 1 tbsp maple syrup and ½ tsp of baking powder in a blender. Bake for 20 minutes and enjoy! Add 1 tbsp of cocoa powder to make it even more decadent. Top with chocolate chips, a small pinch of chili powder, nut butter or jam.
Breakfast just took a turn for the better. Heat a frying pan over medium heat. Once hot add 2 tbsp of pesto to the pan. Once the pesto is warm, crack 2 eggs into the pan and season with himalayan pink salt, ground black pepper and a pinch of red pepper flakes (or chili powder). While the eggs cook in the pesto, toast two pieces of bread and spread with goat cheese (or cream cheese). Remove eggs from the pan and place on the toast. Enjoy!
Pasta chips are exactly what they sound like: cooked pasta turned into chips. Cook a container of pasta according to package instructions, drain and place back in the pot. Toss the pasta with 1 tbsp olive oil, 3 tbsp freshly grated parmesan, and spices of your choice. For a South Asian inspired chip add cumin, coriander and garam masala. Air fry at 400°F and enjoy with dip.
